My Week on Wednesday and Chicken Soup

Visit us each week for a great list of blogs I've visited and articles I want to tell you about. Plus a little of what's going on at my teeny tiny urban homestead || Once Upon a Time in a Bed of Wildflowers

Hello, and welcome to another My Week on Wednesday!

The weather has gone all October on us… which is to be expected, since it is October. The wind is damp and strong, yanking the leaves from the trees and tossing them into puddles. The nights are dark and full of ghosts… or is that just the shadows of blowing leaves?

It doesn’t really matter.

The song The Wreck Of The Edmund Fitzgerald runs in my head as a macabre background to the lines from Winnie the Pooh and the Blustery Day, which are also running through my head.

My canning is more-or-less done for the year. I might make up another batch or two of jam… but I put the big canner away for the year. I still have a bunch of apples to run through my dehydratorbut dehydrating is much quicker than canning!

The kids are gearing up for Halloween and it was Mustache Day at school this week.

October is also a time for crocheting things, and reading good books. It’s a time for fires in the fireplace. And a time for making chicken soup.

I often find that the best way to make chicken soup is to put some chicken stock into a pot, and start throwing things — leftovers, usually — into the pot until you come up with something edible…

Which is exactly what happened at our house tonight… and we came up with something perfectly tolerable. But let’s be honest… you won’t be seeing the recipe on the blog anytime soon. 😉

However, I do have a collection of chicken soup recipes for you from myself, my fellow bloggers at the Homestead Bloggers Network, and some of my other favorite bloggers.

Finished a delicious roast chicken? Don’t toss those bones — use them to make bone broth:

Make your Chicken Stock with Homemade Broth and Veggie Scraps — This is basically how I do it… and, let me tell you, it makes some pretty amazing broth/stock. Plus it’s awesome to turn all those veggie scraps (otherwise known as garbage or, at best, pre-compost) into food.

Stretch your Budget: Chicken — This is another great tutorial on making chicken broth. Plus some other ideas for using up chicken in case you — gasp! — get sick of chicken soup.

Recipes using only the broth:

Roasted Butternut Squash Soup — This would be amazing on a chilly autumn day!

Mushroom and Wild Rice Stew with Swiss Chard — For all that there is no meat in this at all, it is very hearty and warming.

Cock-a-Leekie Soup — Creamy and delicious, this one is another perfect fall dish!

Chicken Soup especially for when you’re under the weather:

Creamy Roasted Garlic and Chicken Soup — A bowl full of this one, and you should be feeling better in no time!

Slow Cooker Chicken Noodle Soup — Mmmm… Chicken noodle soup is like hug in a bowl, and this one is done in the crock pot. Bonus! I would probably use my homemade bone broth rather than canned, but this looks delicious!

Boosting your Immunity: Mushroom Soup with Herbs — This looks divine. And, of course, besides being tasty, chicken soup is fabulous for when you’re sick!

Mama’s Chicken Soup: The Cure for Everything Except Death — This is my go-to for when my family starts to come down with something. It fixes us up every time!

Pepperup Potion — And this is my go-to for when we are sick. it’s just chicken broth, but with some great immune-boosting, cold-and-flu-fighting additions. But it probably won’t make steam come out of your ears!

Don’t wait until you’re ill to enjoy a bowl of Chicken Soup:

Chicken and Dumplings — Um, hello! I love chicken and dumplings! 🙂

Heritage Chicken Chili — This looks amazing!

Cabbage Borscht Soup — If you use chicken stock or chicken meat, then it becomes chicken soup. And it looks tasty so I’m adding it here!

Slow Cooker Chicken and Tomatoes — Yum! This is another recipe where I would probably go for home-canned, instead of canned-canned (in this case for the tomatoes) but this recipe includes two things that I absolutely adore: wine and crock pots.

Homemade Chicken and Rice Soup — I featured this post last week at the From the Farm Blog Hop, but I’m sticking it in here again because, (a) it’s chicken soup, and (b) I especially love that it is made out of leftovers — I mean, isn’t that I was just saying at the beginning of this post?

And now for the Quote of the Week. Approximately daily, I post quotes on my Facebook Page. The quote with the most likes, shares, and comments will become the Quote of the Week. And hands down, no questions asked, and no real surprises, THIS was the Quote of the Week:
